This course consisted of a mulled red wine rum baba, which is a type of cake, a pink rosé ice cream, a clear white wine gelée, which is a type of jellied wine, a brûléed sparkling wine sabayon, a type of wine custard, and a dessert wine raisin sauce served on wooden planks representing the barrels wine is aged in. “Unlike the previous dish, which is very highly stylized, the complexity of this dish comes from the content,” Chef Ryan Shelton said, “We are able to get so many things in one dish.”
